The Guilty Gear series doesn't have HD sprites available, probably. The XX games are from quite a while back, and Xrd is using that gorgeous new 3d model/cel-shading tech. Blazblue, UNIEL, and P4A are all relatively modern sprite-based games, so their assets probably fit in much more nicely.

I don't have any citation on this (lord knows I've looked), but I hear there *might* be more than just the four representative series shown so far. If Anything Goes for Arcsys-published games, then Arcana Heart, Melty Blood, Chaos Code, and Guilty Gear are possibilities. Considering Ruby was never in a fighting game before, it's wholly possible that the Blazblue team will update anyone else that needs a fairly-modern upscaled sprite to fit snuggly with the rest of the cast.
It's a 50/50 chance, but I'm hopeful we'll see Guilty Gear make a playable presence one way or another. It's just a matter of when.

The game was literally just announced at EVO with barely any trailers around. Be a little more patient for further development news to be made about more characters.

That is assuming that there isn't much of a dust-up when it come to IP rights. Examu is the once behind Arcana Heart and last that I checked they have been busy with a 4 and that kickstarter for Six Stars!!!!!!. I can't be sure about Chaos Code and I doubt that Arcsys has a hand in the publishing (I could be wrong about that). Gear maybe since they own it, but Mori and co would be putting in a ton of work to get that done and they are already dealing with the RWBY cast. Melty Blood... Type-Moon would have A TON to say about that and last that I heard, FGO makes MONEY.

Assuming anyone notable makes it from the Type-Moon side of things, do you think Fate characters are more likely, or Nasu just wouldn't see a reason to include anyone from his works?

With Sion in Under Night and Saber in Nitro+ Blasters, I would said that it's a complete toss-up whom gets in from the Verse at all. The only reason that I would assume that the Fate Franchise is more likely is due to two things, FGO and FSN:HF (the movies) which would be quite the promotion for the franchise.
As far as Nasu goes, I don't know if he give the go ahead to use his characters or not. Maybe if French Bread was in co-production on this project (whom Nasu is friendly towards), but I honestly doubt that.
