True that. I'd wager it's because of improvisation type of content streamers provide, but even they have some kind of continuity occasionally. Some day?

I don't think it's that weird. You're comparing two totally different types of media.
Touhou has a fictional setting with a cast of interconnected, fictional characters. People create stories with those characters in that setting, or with a different setting, exploring possibilities with the limited canon information provided. There's a lot of room for interpretation.
Hololive has no setting, and the characters are all real people using avatars, and they're constantly creating new content by themselves and with eachother. Most fanart is based on the things they actually do, rather than imagining things they could do. There's very little room for interpretation.
