I think it's (at least partly) the fact that the sizes are reversed -- the fact that Gil is smaller and Saber is bigger makes the arrogance just look cute.
To elaborate, if Gil-ko looked like post #1019331 , and Archetype Saber looked more like a kid, but their interactions were the same as normal, it would not be 'cute'.
