    Way way back Sakuya shown that her paddles have hidden knives in them. So the paddles are most likely reinforced or something as it is clear they have a strong backbone.

    While Youmu's paddles were just normal paddles and yeah...they broke. So in turn. She isn't cheating using her swords as Sakuya also has blades handy.

    Sakuya hit the ball many times, while Youmu tried to return that with one hit. With equal total energy or impulse on the ball, of course Sakuya's paddle had to withstand much less force each hit.
