It's odd why more recent fanarts of Sayaka depict her as having large breasts when fanarts of her back in 2011 mostly had small bust unless explicitly labeled to be an older version of her or the artists' who drew her just draw every females with large bust anyway.
Am I missing something? Or are the artists trying to draw Sayaka growing up progressively after the show ended.
I've been wondering this myself. It's even stranger considering that there's an official artwork depicting the subtle ways the characters have grown between the original series and the new film.
I believe Sayaka got a little taller, but that was the only change on her part. Ironically, Homura's bust grew a little, but the change was barely noticeable compared to Mami (who actually got taller AND bigger).

It's probably just a phenomenon of fandom. As a character's identity becomes less rooted in the original work and more in the artwork of fans, they are subject to distortion, often along the lines of fetishization. For example, Tama-nee already had bountiful breasts, but it's the rare picture of her now that has her 'only' as endowed as the original work.

So in other words, Sayaka is the next Tifa.

I don't think that is 100% true, as other characters such as Kyoko and Madoka retain quite a consistent body type in fanart depictions both now and 3 years ago. Homura also gain some bust upgrade in recent arts, but that is likely due to her new more sexualized outfit, and Mami just have whatever size the artist's concept of "big" is ever since back in 2011.
Usually if you see a female character getting bust upgrade in fanart depictions, it's usually the most physical female of the roster(courtesy of the "Boobs of Steel" trope)like Mikasa from SnK being the most common offender in recent memory, so it is rather odd how Sayaka is the only one getting this effect and not Kyoko too. This is even more surprising since some arts back in 2011 depicts or directly point out that Kyouko has bigger breasts than Sayaka.
