The bows are not strung. Those types of bows you only string when in use .

Also Shoukaku's bow seems to be facing almost straight at the viewer, so the curve is not as visible as Kaga’s

Probably the most logical explanation, although perhaps Shoukaku has a truly straight longbow made of yew or something? (that is, as opposed to Kaga & co's yumi composite bows, which has a curve even when not strung)

Guys, the bow is not straight. It only appears that way because the bow is pointed toward us.
