I always had the feeling that it was just a western thing, and that in japan they just didn't strike much interest and get almost ignored by artists, like Letty or the Prismrivers (also, add that they are printwork-only characters).

Kasen says "hi". and the even the 3 fairies were popular before they got a game. And if we compare all of them, the Moon sisters have way more backstory than all of them combined.

Probably because Suika was never meant to be taken as a serious character in the first place. She "wins" at the end of it all, but by then (if you paid attention to the story/timeline) the fact that she wasn't taking things serious was hammered home pretty well.

We all have to remember, that if Remilia, and Reimu did not purposely escilate things on the moon, none of the conflict would have ever happned. Remilia basically announced that she was going to take over the moon, and Reimu, and Marisa went along with the ride, so the moon people had no choice.

It's not just that the heroines lost, but the way they jobbed to the "new girls" just rubbed fans the wrong way.

Except there was never a conflict in the first place; it was all a sham and everyone knew it.
The rumors were just an excuse to force the Lunarians to move, Remilia was just screwing around, Reimu and co were just playing along and the mastermind/secret weapon (Yukari and Yuyuko) did it just to (non-violently) mentally scar the "Brain of the Moon" (Eirin)/Lunarians/society/culture in general.
Mind you, that last bit was told very poorly and only in the print works so most people probably don't know about it.

Considering that most the stories told in games amounts to short conversations told before a fight. ZUN would have to make an RPG to tell any real long story that people were gonna pay attention to.

I really wish Zun would actually make an RPG Touhou game. Especially for the 20th anniversary of Touhou, comming this year. That way, we can actually get a solid, drama packed story for this series. It seems like Touhou is a little static, in terms of the world, and it's characters, and most of the "drama" in the print works are either exposition, or hilarious mishaps. Even Wild, and Horned Hermit, and Forbidden Scrollery had several chances to put some actual drama, and conflict in the project, but ZUN basically eschews that in most of his works. I don't know, i just feel that Touhou is becomming a little too safe these days.

Honestly, If ZUN doesn't want to rely on other people for help(such as Tasforo or artist friends) he could totally use like RPG maker. RPG maker is pretty legit I say.
