Just a week past the ex date, it's still ok.. Since mentsuyu are made with dashi, mirin, and shoyu IIRC, hopefully there's enough salt and sugar to preserve it..
That's a best before date, not a expiration date. Soy sauce doesn't go bad quite that quick. It may taste a bit funny depending on whether she's using Gregorian calendar New Year or Lunar New Year, though.
An anecdotal story that was passed around my part goes like this:
A Japanese exchange student was staying with a Thai student at the university dorm. For dinner, they decided to cook something to eat. The Japanese student went for the fridge and pulled out some pork, only to realize the pork was past the expiration date by two days. The Japanese student was about to throw it away when the Thai student intervened, saying the pork is still fine. The Japanese student was flabbergasted, but reluctantly relented and ate it for dinner.
Apparently, they take the expiration date/best before date very seriously, unlike Thai kids who hold the expiration date as a "guideline" as opposed to a time limit.
Last month I boiled cold soba and then use the sauce that's about one year past expiration in the fridge. Taste a little bitter, but no problem at all (=_=)/
Had mirin that's probably almost two year and have the white things developing near the lid. But that thing is alchohol so it's probably fine. Just like the almost 4 years old vinegar in the cupboard.

That title is a kind of pun; "年越しそば (としこしそば)" is often translated as "New Year's Eve soba" because Japanese people eat it on New Year's Eve, but "年越し (としこし)" generally means "being over a new year" or "carried out from the past year". So the title does not indicate when Muppo eats that.

Your mind also plays a role in it. If you keep thinking that you'll get sick from expired soda or food you create stress which can lead to stomachache. Of course not saying that you should go around eating expired stuff but if you keep stressing on that part your body will play along, kinda like when you take placebos.
I've experienced it all too well. Whenever I eat something I don't like I keep thinking I'll get sick and later on my stomach starts hurting because of such things.
