In any case, that ride has "seats" stationed around the wall and what happens is the ride starts spinning, just fast enough to the point that you "stick" to the wall.

It's just normal slight of hand. I used to do same with a children's "Magic cup ball" trick too.
You have 3 cups and 3 balls. You just move the cups fast enough (and tricky enough) to get 2 or 3 balls under 1 cup. If anything, having Sukuna there is just extra insurance so she can grab a ball while in movement while Reimu finishes it up by closing said cup over the ball.
In fact, she doesn't really need Sukuna at all for such a simple trick.
