Intestines tacos (tacos de tripa) were my favorites when I was a kid and I remember eating a lot of blood sausages (in Mexico we called it Moronga) at the same age. There's also a stew made with offal called "Pepena", wich includes beef kidney, intestines, heart and other organs. Pretty yummy.
