They were named or renamed in honor of destroyed ships. It's kinda like entering into service under the names of their KIA'd family.

Correct me if I'm wrong. Each of the four were newly built Essex-class carriers that were renamed in honor of the fallen carriers that came before them. The initial names of the four were Kearsarge,Cabot,Oriskany,and Bon Homme Richard. Respectively becoming Hornet,Lexington,Wasp and Yorktown. If anything the're completely different people, since their keels had already been laid down. It's more than likely that they could just not know her, and perhaps a bit of elitism (those capes though!). (Note that this was before the translation)

I have no idea what 下饺子 means in the naval sense. Much appreciated if someone can explain.

Shouldn't they at least show respect to Enterprise because she did at one point become the only carrier the US Pacific Fleet got in the Pacific Theater before the Essex carriers and Independence light carriers came into the scene.

Most likely they would probably consider her to be a relic or not in their league I guess

If I may inject opinion into this discussion,

IRL (IIRC, BICBW) those ships were considered direct reincarnations of the ships prior (including skill and memories... or so they attributed the freaky things the ships pulled off), so the Yorktown and Hornet should be pretty close to the Enterprise (even without conscious memories, ancestral memories should draw them to her) and the Lexington should show at least some level of familiarity.

Lex (CV-16, but the second oldest Essex) and Enterprise actually had a lot in common, both being carrier commander at points and having pulled off a lot of the same feats, all the way up to their horrific habit of soaking an insane amount of damage (typically instead of another ship, ala Shokaku) and surviving when everyone else had counted them as lost - multiple times even. Thus, they both ended up dubbed as 'Ghosts' (Blue Ghost and Grey Ghost, respectively).
They also both had roughly the same taste in maneuvers, tactics, and strategy (even beyond their higher up being the same guy) and were both brazenly reckless, yet somehow pulled it all off.
So, personally, I think if they were human they'd have bonded pretty fast. Birds of a feather and all that.

Yorktown (CV-10)... well, she retired as a Yorktown-class Aircraft Carrier (albeit Anti-Submarine) and currently carries exhibits about the Yorktown-class CVs (or so I've heard). Considering that the Kanmusu seem to know how they died, I think that explains enough.
...Of course, there's the problem of worlds where the ships were replaced with Shipgirls, like this artist's, but [addressed above].

Hornet (CV-12)... well, she's an interesting case. Legend has it that when Adml. Mitscher - who was the skipper of the Hornet (CV-8) from commissioning all the way up to Midway - first stepped foot on her deck he almost immediately fell to his knees and broke down in tears. A young officer approached and inquired the issue, to which Mitscher replied "No, Son, I'm fine... it's just my baby girl is here, alive and well, back in my arms once more."
So, at least one person of relative importance believed them to be the same 'person', in soul if not in body.
Of course, that's just a candidate for a Kancolle version of Touhou's ULiL; but still, these legends make up half or more of a storied ship's lore, so I think it has a place.
And, of course, she also closes out the US 'Ghost' Carrier trifecta as 'Black', but for completely different reasons than the other two.

Wasp I can't say much about as the original and present versions don't interest me as much, but I don't remember that Wasp (CV-7) acually worked with the Enterprise that much... of course - as I said - lack of interest, so I doubt I'd remember reading about her.

More accurately, that's about launching lots of ships into sea in a short time frame as if you are putting dumplings into pot.
