I'm not familiar with cuisine terminology but from what I could read, her food is pretty much tasteless. That's enforced by the 3 sisters reaction in last panel.

Actually as a cook myself (hobby btw) all her substitutions might work, EXCEPT that grape juice....though personally I'll add some herbs plus bit of pepper.

weakened vinegar might have worked better.

no her cooking is editable, she just has the same cooking sense as Miia from Monster Musume. She habitually replaces ingredients with similar, but not proper ingredients.
