Hidamari Sketch managed to continue its last season, when Yuko Goto was seriously ill from lupus and could have died during the recording. They carried her into work, had everyone wear cold masks and I think even time skipped to give Hiro scenes in earlier episodes. But it wouldn't have ended in the middle if she couldn't make it.

"Sudden voice changes" aren't exactly new to the anime industry, either. One of the better known cases was when Mitsuishi Kotono suddenly became sick just before recording the final episodes of the first season of the first Bishoujo Senshi Sailor Moon anime. Another voice actress, Araki Kae, replaced her for the remaining first season episodes, and for her efforts she became the voice of Chibi Usa in later seasons.
Sadly there's no chance of Matsuki Miyu resuming her former roles now, unlike how Mitsuishi did in that specific case.

I think the industry will push on. After all, Isshin Shiba and Takehito Koyasu took over roles formerly voiced by Kaneto Shiozawa iirc. (Koyasu became Eddie then Zato in Guilty Gear and he became Rei in Hokuto Musou).

Yes, other seiyuus taking over roles after the originals have passed on or retired isn't uncommon.
