I've only seen the anime, but if it were anyone else, I'd be moved. Because, honestly, I have no sympathy for Shiro because of how stupidly selfish he is. I have no sympathy for Sabre either because she was a bad*ss character, but basically warrior turned to b*tch by the end of the series.
The whole point of Heaven's feel route(which is the canon route) Wasn't that Shirou was gonna let the city die, but that he doesn't lose sight of what's important to him. Thats why in one of the bad ends for that route, Iilya practically berates Shirou that he was going to (just like Kiritsugu) put the lives of a thousand strangers ahead of someone of personal importance. The answer wasn't just to save who was important to him and screw everyone else, but find a way to keep his Hero ideals without sacrificing himself at the same time. And in the end, he saves everyone.

AFAIK every route is canon by the Word of God. Nasuverse is a multiverse, which is backed up by the very existence of 2nd Great Magic, and hence every route did actually happen.

Well, that also means "Mind of Steel" did happen as well - I prefer to think this was the route that started Archer's misfortunes :3 Also, when you're entering a battle of experienced mages while unable to use anything but material strengthening, it IS likely that you'll die, so bad ends are natural.
You are trying to get the saint grail and your master goes F.O.E.! Kiritsugu's t-shirt says "I were on the fourth war trying to save the world, but in the end all I got was this F.O.E.!" Rin, sakura and saber, under the tree, trying to k-i-s-s... an F.O.E!
