Contrary to what movies portray, during falls from great heights, dirt makes for a softer landing than water. Here's some relatively easy-to-digest science on the topic. But basically, water isn't fluid enough to "cushion" a fall if you're flying at it fast enough (and human bodies, being mostly water, will be as likely to "splash" as the water they are hitting... into chunks) Because loose dirt is more compactable than water, it can absorb more of the impact as plastic deformation than water will at that speed.
Incidentally, there are also tales of people who fell into fields from thousands of feet in the air while skydiving, had their parachutes fail to deploy, but controlled their descent as best they could, and survived the landing with just some serious bruising.
