I'm not entirely sure cheating is something rational everyone just learns from. Some people just can't help themselves no matter how much they get burned.

Artoria was a victim of Guinever cheating on her with Lancelot, however, and it ultimately led to the destruction of the kingdom that she had worked hard and sacrificed much to build. That should leave her with even more distaste for cheating than what she already had before that incident. And Saber Alter is explicitly a version of the one from the Heaven's Feel route, i.e. she shares the regular Artoria's opinions on most things (the only real difference between the two is that Alter drops all pretense of nicety and is more cold-heartedly pragmatic than even Artoria's King Arthur persona had ever been).

It's not like cheaters can't rationally understand that cheating is bad unless they experience it to themselves, since infidelity is almost definitionally a crime of passion. Whether someone will cheat or not is a matter of their personality (studies find it basically amounts to "extroverts are VASTLY more likely to cheat than introverts") and circumstance. Knowing the pain that infidelity can bring might be enough to tip the balance in an edge case, but a majority of people would either firmly resist infidelity or dive headlong into it without that being a significant factor.
Saber Alter, personality-wise, is someone who probably would never cheat regardless of being hurt by cheating, herself, just because, as you say, she's not exactly a very passionate person from the get-go, and wouldn't be easily swayed into pursuing an illicit relationship since she's so difficult to sway into having a normal, healthy relationship to start with.
It's one thing to like to troll, it's a whole different ballpark to troll via feigning intention to do something that you despise so much from personal first-hand experience as a victim of such that you have more than enough reason to balk at the mere idea of joking about it in any way.

May headcanon is that Altoria never actually thinks of even pretending to be trying to get Jalter's husband to cheat on his wife with her (i.e. it's just pure coincidence, and thus we should be blaming whichever higher power is arranging circumstances to make such coincidences happen with suspicious frequency), but upon seeing Jalter's conflicted face she always nigh-reflexively puts on a smug smirk just to see her flip out, because for some reason she enjoys seeing that reaction enough to put aside her hatred of adultery.

Again, she's probably just his coworker that he goes drinking with after work, and she was the designated driver.
