Because if he said "Knight and orc" you wouldn't think anything of it. But "orc and female Knight" already implies ... a certain popular scenario which is what he's going for, at least in this strip. Plus it's probably more interesting to people that way.

That, and the "Ugh, just kill me already!" line is heavily associated with the Female Knight and Orc scenario (not necessarily an orc, but definitely involving a captured female knight at the mercy of her captors), to the point of being memed and parodied.
