Aye, it does. The periscope was added to the BoP bridge set for Star Trek V and retained for Undiscovered Country & Generations (and I THINK it was used on DS9 as well).
On Uchuu Senkan Yamato 2199, there was a Gamilas vessel (they called it something like a dimension ship) which basically was a space submarine, able to "submerge" and fire torpedoes. It even looked like a submarine.
