Maybe it's an instinct thing. Elves in most fiction are naturally attuned to nature so her being able to calm an angry forest creature is as easy to her as breathing.

Uh... high-density cartillage? I mean human ears keeping their shape with this tissue (of softer sorts), but elves' "knife ears" should naturally evolve to have it quite hard to keep it's shape and not sag under it's own weight.

Her limbs are necrotic (so, the tissue is literally dead and decaying- hence my amazement that she doesn't have sepsis). The worst damage her ears seem to have are some wounds, so they (and her head in general) are in much better condition than her limbs.
