In a world full of monster people I'd expect humans to be way tougher to deal with all the craziness they'd live through.
Not necessarily; humans are already ridiculously tough, to the point of shrugging off many injuries that'd make a larger animal drop dead instantly from shock.

Part of that is probably because of our tendency (and capacity) to care for injured friends and family. If an animal would never live long enough to recover from an injury, there's no point in surviving it.
Bear in mind that the horse part of this centaur is a lot smaller than an actual horse would be. Wikipedia says that an average fully-grown thoroughbred is about 163cm tall at the shoulder, but a horse's shoulder corresponds to a centaur's hips. This centaur's front legs are about the same size as a human girl's legs in proportion to the human part of her body, if not a bit smaller, so if she had those proportions and a horse part that was as big as an actual horse, then she'd be well over ten feet/three meters tall in total.
