    何度か訪れたことがあるヨーロッパは、私にとって第2のホームと言っても過言ではありません。
    今回は、そんなヨーロッパの家庭料理・郷土料理を いくつかピックアップして描いてみました。
    皆さんは、どの国の料理を食べてみたいですか?

    A simple 4 person Boerenkool stamppot recipe:

    Ingredients:

    • 600 grams chopped kale (boerenkool).
    • 1000 grams of peeled potatoes cut in chunks.
    • 250 grams of diced bacon.
    • A splash of milk (like 30 grams or something?)
    • Half a hand of oatmeal, not a lot.
    • Smooth/french mustard to taste
    • Salt and peper to taste
    • Some (instant) jus
    • Smoked sausage (preferably rookworst)

    Kitchenware:

    • One quite large pan.
    • One small pan to bake the bacon.
    • One medium pan to boil/heat the sausage (if it is rookworst)
    • One masher for the potatoes

    Recipe:

    • After preparing all the ingredients boil the potato in the large pan and add the kale on top (the potatoes need more heat than the kale so keep the potatoes at the bottom)
    • While boiling the potatoes & kale start frying the diced bacon in the small pan, keep truing them over with a spatula until just getting crispy.
    • When the potatoes & kale are done, pour of all the water, before roughly mashing all the potatoes & kale in the pan.
    • Add the milk and oats to the potatoes.
    • Add the mustard, pepper and salt to the potatoes to taste (you can add more later)
    • Add the fried bacon plus fat to the potatoes.
    • Mash & mix everything together.
    • Cook everything together for a few minutes, then you should be done and have your Boerenkool stamppot.
    • Regarding the sausage/rookworst, we normally only have to boil the rookworst, but if you can not get it another sausage is fine as well, just use your best judgement to prepare the sausage.
    • Serve the stamppot.

    When eating the stamppot i like mixing it with some jus and more mustard (some people use vinegar which is similar as mustard is just vinegar and mustard seeds), then have the sausage on the side with more mustard.
