I've always wondered... if you cut off their heads, do they retain the ability to speak and such or is it a simple "you die now" thing?

IN the case of Mokou and Kaguya, they "die" whenever they are killed, and then resurrect with a new body. No word on how long they stay "dead" but if the fight against Mokou is any indication, the resurrection can be almost instantaneous.

In theory, without lungs and air passing through, you can't speak. However a recent decapitated head could move eyes and even bite for a few minutes before brain lose conscious for no blood (and oxygen) circulation.
