I don't get their complaints. Zombies are supposed to be stiff and clumsy. How limber do they think zombies can get?

Clumsy, yes, but most of them shouldn't be stiff — rigor mortis is gone by around 24 hours after time of death. Now, a Jiang Shi should be stiff, of course, because that's why they hop.
