Many of these have rather untranslatable names, or rather, names that when translated don't mean much, such as Umibouzu (sea monk), Aobouzu (blue monk), Tsuchigumo (ground spider). Guess I'll be using translation notes a lot.

Following the OST tracklisting and confirming on YouTube, it's Ippon-Datara, who according to Wikipedia is a one-legged mountain dwelling giant. Coincidentally, he appears in some Shin Megami Tensei games. In Persona 4, the Compendium info refers to him as a possible corruption of the fallen blacksmith god (the one-leggedness aspect remains). Hope this tidbit of info served of any help.
