Can't say I know much about the canon stuff but it's probably irrelevant; if her immortality is regenerative, so as to continuously do everything in its power to restore her body to the same condition it was in when she drank the elixer, then the cancer'd never develop.

Resurrective. It's resurrective! Don't think of it as regenerative, because that gives the idea that she isn't really immortal because you could simply blow her up till nothing is left for her TO regenerate from. She isn't restored because she can quickly regrow hurt parts. She is restored because she quite literally can't die. It's resurrective.
